What you need

1 ½ tsp cumin seed

¼ yellow onion

½ tsp kosher salt
¼ tsp ground turmeric

½ tsp chili powder

4 tbsp cilantro
1 tbsp vegetable oil
2 purple potatoes

1 ½ cup all purpose flour

⅓ cup snow peas
1 tbsp lemon

1 tsp basil

3 tbsp salted butter

1 coriander powder

1 garam masala
1 ginger paste
Instructions
- Dough: Mix all dry ingredients, then rub in the butter until it resembles bread crumbs. Add ACV and water 1 tbsp at a time until the dough just comes together. Knead for 2-3 min until you have a stiff dough. Rest for 20 min - Filling: Cube and boil potatoes until tender. Heat oil in a pan and sauté cumin seeds and onion until golden. Add ginger garlic paste and all spices and sauté for 1 min. Add potatoes and roast for 1-2 min, then mash them lightly. Add remaining ingredients and mix. Let cool for 10 min - Assembly: Divide dough into 4 balls. Roll each ball into a 9x6” thin oval. Divide into 2, and shape into samosas like I showed in the video. Repeat until you have 8 samosas - Frying: Heat 2” oil in a wok until medium hot. Keeping flame on medium/low, fry samosas for 10-12 min until golden. - Serve with any chutney & enjoy!View original recipe
