What you need

1 cup shredded cheddar
1 tbsp egg

1 bell pepper
1 tsp chili flakes

6 chicken tenders

1 tsp kosher salt

1 tsp chili powder

9 puff pastry

1 cup tomato sauce
2 tbsp vegetable oil

1 ½ tsp garlic powder

1 ½ cup italian cheese blend
Instructions
• Brush butter on an upside down muffin pan • Divide the croissant dough into 9 long strips. Roll each strip up, then flatten with a rolling pin so it is thin and large enough to wrap the muffin cup on the outside. Gently stretch and press down. Repeat until all 9 cups are covered. Let rise in a warm place (75F) for 2.5 hours • Preheat oven to 350F. Brush egg wash on the cups and bake for 20 min. Then cover with a tray to flatten the cups and bake 5 min. At this point the cups should be a golden color. Remove from oven and set temperature to 450F • Sauté chopped chicken in oil along with spices for 3-5 min. Add veggies and sauté on high heat until they start to caramelize. Taste and adjust seasoning as needed • Layer each croissant cup with a mixture of the two cheeses, sauce, filling, and more cheese on the top. Cover lightly with foil and bake at 450 for 10 min.
